Chocolate is such an amazing food. This pairing of an amaretto chocolate ganache and pie is really adult and not for basic taste buds. This blog is bxbakery.com we are blogging, presenting videos and articles on food, travel and technology, I don’t want to be basic.
Sweet potato pie has been the same for years  I took my shot at jazzing it up and people loved it.  I think this is easy to do. Here are my caveats and advice for you. Know your audience. Tell a few people in the crowd that you are doing this not that you are asking but this is what you are bringing or making. IF they don’t like it and are raking you over the coals get new friends or write them out of your will. They are not good for you.
- The pie should be cooked already room temperature and solid
- Measure out the chocolate
- Measure out the alcohol and have the bottle next to you.
- I used amaretto but push the limits try Cognac, bourbon, Grand Marnier, Tequila or a red wine
- Measure out the cream
- Ganache has to be thick and coat the back of a spoon smoothly and be able to set
- taste your ganache as you mix in the alcohol but think about your guests are they a bunch of guyabo?
- pour dead center until it reaches the crust
- let it set
- I added whip cream. Spike that also!
You can precut the slices and arrange them on a plate or let people go for it. My advice is let people go for it let them cut their own slices. Its been a tough few years everyone deserves a slice of something.
