This is the type of meal that is made at a beach cook out in Jamaica. I made this simple and rustic dish for some friends

Callaloo is a leafy green vegetable commonly used in Caribbean cuisine. It is one of the many foods that was brought over by the Africans that were captured during the slave trade.

There are a variety of ways to cook Callaloo and it is often paired with salted or fried fish.
