Stir-fry curry shrimp with vegetables is one of the quickest dishes to prepare. 

Ingredients and cooking

-1/2 head cabbage, chopped
-1 bunch collard greens, chopped
-1/2 onion, diced
-2 cloves garlic, minced
-1 tablespoon olive oil
-1/2 teaspoon curry powder
-1/4 teaspoon cumin
-Salt and pepper to taste
-1/2 pound shrimp, peeled and deveined

1. In a large skillet or wok, heat the oil over medium-high heat. Add the onion and garlic and cook until softened, about 2 minutes.
2. Add the cabbage and collard greens and cook until tender, about 5 minutes.
3. Add the curry powder and cumin and season with salt and pepper to taste. Add the shrimp and cook until pink and opaque, about 3 minutes.

Serve with rice or noodles. Enjoy!
