This delicious vegetable ribbon medley is one of the most impressive dishes have ever made. Everyone will remember you for making it. It can be a pure vegan meal or one of the most colorful vegetable side dishes in your repertoire. The use of the vegetable peeler creates ribbons of vegetables that are firm enough handle a good sauté or sear. Cook quickly by itself to keep vibrant colors. Fold in fresh herbs like cilantro, basil or thyme to make the dish even more delicious.

Ingredients:

  • 1 large zucchini*
  • 1 large Yellow Squash*
  • 1 Red onion julienned *
  • 1 red tomato sliced
  • 4 garlic cloves thin slice
  • Fresh Cilantro rough chopped
  • Salt & Pepper to taste
  • Butter (optional)

*Please note the technique for getting the ribbons and the dices from the carrots, zucchini and squash. With them all being freshly washed the sides are peeled to create ribbons. Each vegetable should create roughly 15 to 18 ribbons. Small, diced vegetable should yield ¼ cup 

Place a few slices of garlic, onions and olive oil into the pan on high heat until they become translucent. Add a teaspoon of each of the small, diced vegetable along with salt, pepper and chopped cilantro. Sauté until translucent. Move ingredients in pan to side and add some ribbons of the carrots sautéing quickly. When the carrots begin to wilt add in zucchini and squash ribbons and continue to sauté on high heat. Add ½ teaspoon of butter to finish and serve hot.
